Szechuan Vegetable Soup

Ingredients:

  • Szechuan Vegetable (1 piece)
  • Pork Ribs
  • Diced tomatoes
  • Tofu
  • Dried scallops

Method:

  • Wash and soak the Szechuan vegetable for 30 mins to 1 hour. This is to remove the seasoning from the vegetable. Slice thinly.
  • Blanch the pork ribs with boiling water
  • Place sliced Szechuan vegetables, pork ribs, diced tomatoes, dried scallops in the pressure cooker. Add 3 big bowls of water
  • Set as “Soup” mode for 30 minutes
  • Allow the pot to release pressure after 30 minutes
  • Set the mode as “Bake” and add tofu.
  • Set aside till ready to serve.
